Recipe Club and Potluck: December 2025

We enjoyed a variety of delicious dishes at this month's Recipe Club and Potluck program! Each of these wonderful recipes are sure to brighten your Holiday festivities with variety and flavor-- from spinach and bacon quiche to chocolate cookies, cake, soft pretzels, and more! 

Be sure to join us for next month's Recipe Club-- each month, we bring a normal-sized, homemade dish to pass, along with a copy of the recipe. After a potluck-style lunch, we all get copies of the recipes to enjoy! 

January's Recipe Club and Potluck program takes place on Friday, January 9 @ 1:00 pm, and you can sign up to join us starting on Thursday, December 18 @ 9:00 am! 


Spinach and Bacon Quiche with Swiss and Gruyere

Ingredients 

  • 1 refrigerated pie crust
  • 6 eggs
  • 1/2 cup milk
  • 6 slices bacon cooked and crumbled
  • 8 oz. frozen spinach, defrosted and water squeezed out
  • 1 1/4 cups shredded Gruyere and Swiss cheese
  • 4 garlic cloves minced
  • salt and pepper
  • 1 Tablespoon smoked paprika

Kidney Bean Salad

Kidney bean salad recipe.

Ingredients

  • 2 cans of drained, dark red kidney beans
  • 1/2 small onion, chopped 
  • 1/3 cup Vlasic sweet pickles, chopped 
  • 2 Tbsp. pickle juice
  • About 1/2 cup salad dressing, or to taste 
  • salt and pepper 
  • 3/4 boiled eggs, chopped

Directions 

  1. Combine all ingredients and enjoy! 

Soft Pretzels

Ingredients 

  • 1 1/2 cups warm water
  • 1 packet active dry or instant yeast 
  • 1 Tbsp. granulated sugar
  • 1 tsp. salt
  • 2 Tbsp. unsalted butter melted and slightly cool
  • 4 cups all-purpose flour, plus more for sprinkling on counter 
  • coarse sea salt for sprinkling

Festive Sangria Mocktail

Ingredients 

  •  2 cups no-sugar-added pomegranate juice (or cranberry)
  • 3 ½ cups apple juice
  • 1 small orange cut into thin pieces
  • 1 lemon cut into pieces
  • 1 Granny Smith apple, cut into small pieces
  • ¼ cup pomegranate arils (or a handful of fresh cranberries)
  • 4 cups cold ginger ale (or ginger beer, sprite, sparkling water)

Winter Polish Tea

Ingredients 

  • 1 cup boiling water
  • 1 black tea bag 
  • 1 Tbsp. raspberry syrup, or strawberry syrup, to taste 
  • 1 tsp. honey, to taste 
  • 1-2 lemon slices, washed 
  • 1-2 orange slices, washed 
  • About 5-6 whole, tart cranberries, washed 
  • 1/2 cinnamon stick or 1/2 teaspoon cinnamon 
  • 1-2 whole cloves 
  • 1-2 thin slices of ginger - washed or peeled 
  • 1 star whole anise, optional 
  • 2-3 apple slices, optional 

Directions

  1. Brew the tea: place the tea bag in a mug and pour boiling water over it. Let it steep 3-5 minutes, depending on your preferred strength, then remove the tea bag. 
  2. Add flavorings: Stir in the raspberry syrup, honey, and all the ingredients you choose until the honey is fully dissolved. 
  3. Serve: Enjoy the tea while it's hot to melt away the winter chill! 

Australian ANZAC Biscuit Cookies: Recipe from Annie!

Ingredients

  • 2 cups flour 
  • 2 cups rolled oats 
  • 2 cups sugar 
  • 1 cup coconut
  • 1 cup butter
  • 2 tbsp. golden syrup
  • 3/4 tsp. baking soda
  • 1/4 cup boiling water 

Directions

  1. Preheat oven to 350 degrees F. Lightly spray cookie sheets, and mix dry ingredients. 
  2. Melt butter and syrup in a medium size saucepan. Dissolve baking soda in boiling water, then add to butter. Mix carefully-- it will bubble! 
  3. Mix all dry ingredients together well. Add butter to the dry ingredients, and mix. 
  4. Use a scoop to form cookies and place them on a cookie sheet. Flatten them with the palm of your hand. Bake 12 minutes, or until golden brown. 

Chocolate Depression Cake

Ingredients
For the Chocolate Cake: 

  • 1.5 cups all-purpose flour 
  • 1 cup granulated sugar 
  • ½ tsp salt 
  • 1 tsp baking soda 
  • ⅓ cup unsweetened cocoa powder 
  • ⅓ cup cooking oil 
  • 1 Tbsp vinegar 
  • 1 tsp vanilla extract
  • 1 cup water 

For the Chocolate Icing: 

  • 1.5 cups powdered sugar
  • ¼ cup unsweetened cocoa powder 
  • 3 Tbsp water 
  • 1 tsp vanilla extract
