Recipe Club and Potluck: January 2026

Homemade Vegetarian Chili

Ingredients 

  • 2 tablespoons extra-virgin olive oil
  • 1 medium red onion, chopped
  • 1 large red bell pepper, chopped
  • 2 medium carrots, chopped
  • 2 ribs celery, chopped
  • ½ teaspoon salt, divided
  • 4 cloves garlic, pressed or minced
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 ½ teaspoons smoked paprika
  • 1 teaspoon dried oregano
  • 1 large can (28 ounces) or 2 small cans (15 ounces each) diced tomatoes, with their juices
  • 2 cans (15 ounces each) black beans, rinsed and drained
  • 1 can (15 ounces) pinto beans, rinsed and drained
  • 2 cups vegetable broth or water
  • 1 bay leaf
  • 2 tablespoons chopped fresh cilantro, plus more for garnishing
  • 1 to 2 teaspoons sherry vinegar or red wine vinegar or lime juice, to taste
  • Garnishes: chopped cilantro, sliced avocado, tortilla chips, sour cream or crème fraîche, grated cheddar cheese, etc.

  • 1/2 teaspoon salt

Mexican Bean Soup

Ingredients 

  • ½ large yellow onion
  • 3 tablespoon olive oil
  • 2 cloves garlic
  • 15 oz sweet corn (drained)
  • 15 oz kidney beans (drained & rinsed)
  • 15 oz black beans (drained & rinsed)
  • 15 oz diced tomatoes (drained)
  • 4 oz green chiles
  • 2 jalapeños
  • 30 oz green enchilada sauce
  • 4 cups chicken broth
  • 2 tablespoon lime juice
  • 2 tablespoon taco seasoning
  • ¼ teaspoon black pepper
  • 1 teaspoon sea salt
  • ½ cup heavy cream
  • ¼ cup fresh cilantro

Cheese Biscuits

Ingredients 

  • 2¼ cups all-purpose flour 
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ½ teaspoon plus ¼ teaspoon garlic powder, divided
  • ¼ teaspoon paprika
  • ½ cup cold unsalted butter cubed
  • 1 cup shredded cheddar 
  • ½ cup cold buttermilk 
  • 1 large egg, lightly beaten
  • ¼ cup unsalted butter, melted
  • 2 tablespoons finely chopped parsley

Baked Lima Beans

Ingredients 

  • 1/2 pound baby lima beans 
  • 1 Tablespoon olive oil 
  • 1 Tablespoon yellow mustard 
  • 1 teaspoon salt 
  • 1 cup reserved bean liquid 
  • 1 Tablespoon white vinegar 
  • 3 Tablespoon light brown sugar 
  • 1 can Campbells tomato soup 
  • 1 cup diced onion 

Directions 

  1. Soak baby lima beans in water overnight in cold water. Drain water and cover beans with fresh water. Simmer beans for 40 minutes, or until tender. Drain beans, reserving one cup of bean liquid. Put beans in a quart dish. 
  2. Sauté onion in olive oil until transparent. Add all other ingredients and simmer about ten minutes. Pour sauce over beans. 
  3. Bake one hour at 350 degrees Fahrenheit, or refrigerate and make the next day. 

    Option: Add 1/4 pound cooked bacon!

Limonada Suiça - Brazilian Lemonade

Ingredients 

  • 2 limes quartered
  • 3 tbsp sugar
  • 6 tbsp sweetened, condensed milk
  • 2 cups water
  • 2 cups ice
