This month's Recipe Club and Potluck program celebrated the flavors of summer! Attendees exchanged recipes for fresh salads, delicious dips, indulgent desserts, and more! Fresh Strawberry and Cucumber Salad
Ingredients
- 4 cups strawberries (hulled and quartered, about one pound)
- 2 Tbsp. fresh basil, thinly sliced
- 1 Tbsp. white balsamic vinegar
- 1 tsp. sugar
- 2 English cucumbers, peeled, halved lengthwise, seeded, and thinly sliced
- 1 tsp. lemon juice
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper

To make this wonderfully fresh summer salad, combine the strawberries, white balsamic vinegar, and sugar, then place in the refrigerator. Combine the sliced cucumbers, lemon juice, salt, and pepper in another large bowl. When ready to serve, add the strawberry mixture and fresh basil to the cucumber mixture, and gently combine.
Special Cheese Cake
This cheesecake comes together with a homemade graham cracker crust and a sour cream topping, and has exceptional flavor!
Nacho Dip
Ingredients
- 1 can refried beans
- 1 pint sour cream
- 1 packet taco seasoning
- tomatoes, lettuce, cheese of preference, and black olives as desired
Directions
- Mix the beans, sour cream (less than a pint), and seasoning. Layer in the bottom of a dish.
- Layer the lettuce, tomatoes, cheese, and olives on top.
- Serve with Doritos!
Broccoli Salad
Ingredients
Dressing
- 1/2 cup sugar
- 1 cup mayonnaise
- 2 Tbsp. vinegar
Salad
- 1 head of fresh broccoli
- Crisp bacon, to taste
- 1 onion, chopped
- Sunflower seeds and raisins, to taste
Directions
- Make the dressing and set aside.
- Assemble the salad by mixing chopped broccoli, bacon, onion, sunflower seeds, and raisins.
- Mix dressing into salad and serve.
Brownie Cookies
Ingredients
- 2 cups chopped pecans, toasted, if desired
- 3 cups semisweet chocolate chips
- 1/2 cup butter, cut into pieces
- 4 ounces unsweetened baking chocolate, chopped
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups sugar
- 2 teaspoons vanilla
- 4 eggs
