Recipe Club and Potluck: May 2025

Asparagus Quiche

  • Dough for single-crust pie
  • 1/2 pound fresh asparagus, trimmed
  • 2 green onions, thinly sliced
  • 1 tablespoon all-purpose flour
  • 2 cups shredded Swiss cheese

  • 1/2 teaspoon salt
  • 1/4 teaspoon basil
  • 1/8 teaspoon cayenne pepper

Ingredients 

  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups semisweet chocolate chips
  • 1 cup coarsely chopped nuts, if desired

Butterscotch Brickle Cookies 

Ingredients 

  • 1 cup butter, softened
  • 2 cups brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups all-purpose four
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 1 cup toffee bits

  1. In a bowl, whisk together the flour, baking powder, and sea salt. Set aside.
  2. In a separate bowl, cream together the butter and brown sugar.
  3. Beat in the eggs, one at a time.
  4. Add vanilla and beat until thoroughly combined.
  5. Add the dry ingredients to the wet ingredients in intervals and beat until a dough forms.
  6. Turn off the mixer and stir the toffee bits into the cookie dough.
  7. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes, or overnight.
  8. When ready to bake the cookies, heat oven to 350 degrees F, and line a baking sheet with parchment.
  9. Using a cookie scoop, scoop balls of dough and place two inches apart on baking sheet.
  10. Bake for 8-10 minutes.
  11. Remove from the oven, and gently but firmly give the baking sheet a smack on the counter to flatten the cookies. This helps give cookies a fudgy center.
  12. Remove cookies from the pan and cool on a cooling rack. 

Makes three dozen cookies.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground nutmeg
  • 2 large eggs
  • 1 cup buttermilk
  • 1/3 cup canola oil
  • 1/4 teaspoon almond extract
  • 1 cup dried cranberries, chopped
